After an in-depth dive into Thai cuisine, Samyukta Nair shakes up things at her Mayfair’s Koyn, by making the restaurant’s basement into its own. Koyn Thai has recently opened as a ‘restaurant within a restaurant’, headed up by Paris-based Rose Chalalai Singh. You’ll be dining extra spicy, drawing inspiration from the North, South and Central Provinces of the Kingdom – taking nods from Rose’s childhood. From the menu, make sure not to miss the ‘Pomelo Salad’, ‘Green Papaya Salad’, ‘Green Vegetable Curry’ and classic ‘Pad Thai’. For those who fancy a sweet finish, try the ‘Mango Sticky Rice’. You’ll be seriously impressed by the flavours of Thai cuisine.
